Smoked tea , or the very famous Lapsang Souchong .

Very famous since the 17th century, smoked tea is manufactured in China, mainly in the Fujian province. Commonly called Lapsang Souchong or Tarry Souchong , this black tea with twisted leaves is oxidized then dried in the heart of pine wood smoke , often spruce . Its character then takes on the flavor of smoke , which makes it an ideal tea for breakfast or for brunch . It is also used to enhance cooking recipes.
