Ingredients to prepare two jars of tea jam
- 10g of tea of your choice (here we made the jam with our black tea L e Thé de la Concubine with flavors of cherry blossom, lychee, grapefruit, orchid, geranium, and its rose and violet petals.
- 500ml of water
- 3 to 4 large tablespoons of agave syrup
- 2g of agar-agar
Preparation of tea jam
- Infuse the 10g of tea in 500ml of water in your usual teapot, cover well during infusion to preserve all the aromas (be careful you must respect the temperatures and infusion time which correspond to the type of tea chosen. For example, for a green tea, the tea will infuse for 3 minutes at 70°C; for a black tea, the tea will infuse for 5 minutes at 95°C)
- Strain the tea leaves once the infusion is complete and pour the tea into a saucepan.
- Add the 3 or 4 tablespoons of agave syrup and the 2g of agar-agar.
- Bring the mixture to a boil (10 to 30 seconds) while stirring. (This boiling step is essential; without it, the agar-agar will not be able to gel)
- Turn off the heat and pour the mixture into jars. It will set as it cools. Store your tea jam in the refrigerator.
