Tea recipe "a taste of tea"
Pumpkin velouté with organic Lapsang Souchong smoked tea
for 4 people
Ingredients :
- 500g of pumpkin
- 2 carrots
- 2 potatoes
- 1 onion
- 1 tablespoon of organic Lapsang Souchong tea "a taste of tea"
- Thyme
- Laurel
- Timut pepper
- Salt
- 2 tablespoons of crème fraîche / or almond cream
- Some pistachios
Preparation of the recipe:
1- Chop the onion and brown it in a little oil.
2- Peel the pumpkin, carrots, potatoes and cut them into pieces as well as the zucchini.
3- In a pot, add all the vegetables, the onion, the bay leaf, and the thyme. Cover with water and cook for 40 minutes.
4- Infuse one tablespoon of smoked tea in 300ml (one cup) of water at 95°C for 5 minutes. Strain the tea and add the liqueur to your pot.
5- Check that the vegetables are cooked, remove the bay leaf and thyme. Blend your soup.
6- Add the cream, salt, and Timut pepper. Sprinkle with pistachio slivers once the soup is served.
