All your questions about iced tea...

What types of teas can I make into iced teas?
Flavored teas are most often offered as iced teas, but you can also consider single-origin teas! An Oolong tea from China or Taiwan, a roasted Hojicha green tea from Japan, or a Korean green tea. Infusing your tea in cold water allows you to discover another side of it. With cold infusion, the tea's tannins (catechins) slowly diffuse into the water, making it easy to avoid bitterness, the flavors will be milder, and the drink will be very refreshing!

Once my iced tea is brewed, how long can I keep it in the refrigerator?
Iced tea can indeed be kept cold until the next day, but we recommend drinking it during the day to enjoy its freshness and flavor.

I left my iced tea in the fridge and it turned bitter... Can I make up for it?
When tea is brewed too hot or too cold, there is an excess of tannins (catechins), which is what gives it its bitterness. Tannins slowly diffuse into cold water, but if you forget to stop the brewing, your iced tea will be bitter. You can add one or two capfuls of liquid cane sugar or a tablespoon of honey or agave syrup to mask this astringency.
